- Keep moisture and soft
If we cook meat on a barbecue grill with charcoal, the far-infrared ray from charcoal
heat the meat inside and outside together. It makes meat more crispy outside and
soft and moisture inside.
If we cook meat on a pan, the mean is going to be heated only one side with conduction heat,
then moisture in the meat will go up to the top which the heat cannot reach and evaporated.
- Shorter time to cook
As I said above, far-infrared heat from charcoal cooks the meat inside and outside at the same time.
However, cooking on a pan will cook the meat only one side with conduction heat, so it takes longer.
