Sugar's 99% of carbohydrate is consist of Disaccharide. Our body needs Monosaccharide to absorb carbohydrates for living. When stomach decomposes carbohydrates, it is changed to Disaccharide which has 2 connection with each other, after that stomach does it again so finally, Disaccharide is decomposed to Monosaccharide.
But sugar already has Disaccharide, so just need one cycle of decomposition.

- Help to reduce a brain's stress and fatigue
A brain only needs Glucose to work and live, so when the brain feels tired and stressed,
the brain starts to seek Glucose. The daily needed amount of sugar is less 30g.
So if you have sugar less than 30g a day, it could be helpful for your brain to reduce

NOOOOOO. All kinds of sugar have more than 90% of sugar(sucrose).
Even though it has a bit more of mineral or something, it could not be a reason to have
sugar a lot. As I said, the daily needed amount of sugar is less than 30g.
Sugar can help you, but if you have it much, then it could be poison.

4. how can use to cook or eat
Any way is fine, but sugar in food is better than caramelized sugar which is dark brown.
Just eat less than 30g which is perfect, at least less than 40g-50g.
